Curry Chicken Salad

2-3 cups shredded chicken (from 2 cooked chicken breasts)

2 small apples, chopped

3 stalks celery, chopped

1/2 onion, chopped (optional – I hate raw onion and skipped this)

5 T plain yogurt

3 T mayo

1-2 T curry powder (start small, you can always add more!)

1 T sugar

pinch sea salt

In a large bowl, mix up chook, apples, celery, and onion.  Mix yogurt, mayo, curry powder, sugar, and salt in a small bowl.  Adjust curry seasoning to taste (I probably used 2 heaping tablespoons) and then mix with salad.  Enjoy as a sammie, over a salad, or on its own.

[note - if you like is saucier, just up the yogurt and/or mayo.  Use all yogurt if you want it lighter, and all mayo if you're feeling indulgent.  adjust curry and sugar to taste - these are just my proportions]

Extra add ins that are fantastic: slivered almonds, raisins, grapes, green onions, and walnuts.

I had mine over mixed greens, sprinkled with raisins and an extra dollop of plain yogurt.
